The machine is available in different versions (single or combined) depending
on the product to be handled.
Single configuration versions:
A) Water blancher, for the following products:
potatoes, carrots, broccoli, cauliflower, green beans, peppers, courgettes,
eggplant, fennel, celery, peas, beans, broad beans and asparagus.
The installation of a wide link conveyor belt version extends its use
also for foliaceous products such as spinach or greens.
In this version, the machine uses counter-current cooling water which
enters at the end to cool the product, then it goes in counter-current
and warms up, it is obliged to by-pass the central blanching part and
proceeds to pre-heat the product at the inlet.
The machine is equipped with one or more pre-heating modules, one or
more blanching modules and one or more cooling modules.
B)
Steam blancher for all products which do not stand cooking in water.
In this version, the machine handles the product with live steam only
in all modules, with the exception of the first and last cooling modules
which run on water
and act as follows:
- the first as a barrier;
- the last as coolers and barrier.
C) Final rapid rehydrator (this version acts as a finisher of the
treatment) for the following products:
rice, barley, oatmeal, spelt, beans (all varieties), chickpeas, broad
beans and peas.
Coupled with the pre-rehydrator mod. 0467, the modular multi-stage blancher-rehydrator
completes the job of rapid rehydration for legumes and cereals. It is
predisposed for the modules to function alternatively with cold water
or steam.
The product thus handled, using the patented technique of alternate hot
and cold treatment, rapidly completes the rehydration with notable weight
recovery.

* A + B + C
* A + B

* B + C
The modularity allows an easily tailor-made machine with a perfect flexibility
in accordance with the specific requirements of each customer.
The number of modules and the relative width are defined by the productive
capacity and the type of processing.
The structure of the module has been designed to obtain different types
of functions:
- Pre-heater;
- Blancher;
- Pre-cooler;
- Final cooler;
- Steam heater;
- Soaker.
The possibility to vary the function of the modules (for a more or less
important role, depending on the situation) assures high precision in
the defined treatment times required for each specific product. Where
necessary, a supplementary module (the last but one) is foreseen as air
cooling.
The product distribution network is in FDA approved polypropylene and
stainless steel, which can stand a working temperature of 100°C even
if continuous.
According to the version, each module can be equipped with the following:
- water recirculation pump;
- continuous mechanical Hydrascreen type filter;
- watertight upper covers;
- lateral doors;
- insulation if there are important zones with temperatures above 50°C;
- AISI 316 stainless steel pump;
- constructed in AISI 316 stainless steel.
